How to change DNS on iPhone (Wi-Fi and cellular)
DNS is set per Wi-Fi network in Settings. Cellular DNS needs an app, since iOS has no switch for it.

Change DNS for a Wi-Fi network

Open Settings › Wi-Fi.

Tap the info button next to the network.

Tap Configure DNS, then Manual.

Delete the old servers and add new ones.

Tap Save.

Which DNS should I use?
Cloudflare (1.1.1.1 and 1.0.0.1) and Google (8.8.8.8 and 8.8.4.4) are fast and free. Quad9 (9.9.9.9) also blocks known bad sites.
Will changing DNS hide my IP address?
No. It only changes who looks up website names. Use a VPN or iCloud Private Relay to hide your IP.
