Force restart.
iPhone 8 and later: Volume Up, Volume Down, then hold the side button. iPhone 7: hold Volume Down and side button.

Clean and dry the screen and your fingers.

Remove the screen protector and case.

Unplug the charger and try again.
Cheap chargers can cause jumpy touch.

Let a very cold or hot phone return to room temperature.
